The mistela It is a drink that has been made for thousands of years. Thanks to the alcohol, the fermentation of the must is avoided, since the yeasts cannot survive, increasing its sugar content, and obtaining a natural sweet product with 15% added alcohol.
The fermentation of the must, under normal environmental conditions, stops spontaneously when the alcoholic graduation reaches 15 degrees. One way to stop the fermentation is to add wine alcohol to the must that has not yet fermented, in this way we achieve that the resulting product preserves all the flavor of the must.
It is a way to preserve grape juice for a long time thanks to the fact that alcohol is a very good preservative.
La mistela es una bebida alcohólica que se elabora con mosto recién prensado y la adición de alcohol vínico con una graduación de unos 15 grados. Con este proceso se impide su fermentación alcohólica, y se obtiene de forma natural una bebida dulce con una graduación del 15% vol.
They can be made with white grapes and red grapes. The best mistelas are obtained from aromatic white varieties such as Muscatel of Alexandria.
