The mistela It is a drink that has been made for thousands of years. Thanks to the alcohol, the fermentation of the must is avoided, since the yeasts cannot survive, increasing its sugar content, and obtaining a natural sweet product with 15% added alcohol.
The fermentation of the must, under normal environmental conditions, stops spontaneously when the alcoholic graduation reaches 15 degrees. One way to stop the fermentation is to add wine alcohol to the must that has not yet fermented, in this way we achieve that the resulting product preserves all the flavor of the must.
It is a way to preserve grape juice for a long time thanks to the fact that alcohol is a very good preservative.
It is an alcoholic drink that is made with freshly pressed must and the addition of vinous alcohol with a graduation of about 15 degrees. With this process its alcoholic fermentation is prevented, and a sweet drink with a graduation of 15% vol is obtained naturally.
They can be made with white grapes and red grapes. The best mistelas are obtained from aromatic white varieties such as Muscatel of Alexandria.
Sometimes mistelas are also made from raisins of the Muscatel variety, where following traditional methods, the Muscatel grapes are left to brown in the Mediterranean sun, giving rise to unique flavors, such as the award-winning Riu Rau limited edition mistelaby Bodegas Xaló.
