Selection of Grapes for the Production of Rosé Wine

The base of any rosé wine is the grape. Although there are various varieties used, Bodegas Xaló uses the Giró grape variety to make its rosé wines. The choice of grape largely determines the flavor profile of the resulting wine.

Brief Maceration

Unlike red wines, where the grapes are macerated with their skins for a long period, the maceration for rosé wine is brief. After the grapes are harvested, they are pressed to extract the must. The peel, which contains the pigments that give the wine its color, is left in contact with the must for only a short period, usually a few hours. This process gives the wine its characteristic pale pink tone.

Fermentation

After maceration, the must is separated from the skins and fermentation begins. Depending on the winemaker's preference, this stage can be carried out in stainless steel tanks, oak barrels or other specific containers.
